Small chips of used oak barrels from the Rioja region of Spain. They'll give your food a strong smoky flavour with a whiskey aroma. 

This makes them especially good for adding flavour to red meats and game but are just as good for cooking meaty fish or veg (try them when cooking aubergine).

Soak the wood in water for around 30mins then add them to a smoking box or direct them onto the coals in the BBQ or Smoker.
